The other day while preparing dinner I wanted something different curry to go along with the rotis . I am bored with the basic onion tomato curry and decided to prepare korma with a twist. This korma turned out pretty good and I had leftovers for 2 days. I am sure this would be a regular staple in my house and hope you like it too.
Vegetables – 1 and 1/4 cup(I used a combination of carrots, cauliflower, potato and beans)
Onion – 1 finely chopped
Tomato – 1 finely chopped
Ginger Garlic paste – 2 tsp
Garam masala powder – 1 tsp
Red Chilli powder – 2 tsp
Coriander powder – 1 tsp
Yogurt – 1 tbsp
Coriander leaves – 1/2 tbsp
Salt – to taste
Microwave or par boil the vegetables for couple of mins. Add ginger garlic paste to the onions and fry for a minute.
Then add red chilli powder, coriander powder and fry for 2mins for the masala powders to blend well.
Then add the coconut paste, 3/4 to 1 cup water and allow it to boil for 5mins in low flame until raw smell leaves.
Serve hot with roti’s or rice.
