I had this salad on Qatar Flight from Chicago to Doha. Normally I hate Indian food served in flights. It tastes bland and no spices. But this time its different, even though this salad portion is very small its full of flavors and loved it.
So I recreated it at home with more spices and did I say its healthy too. These kind of protein rich beans salad are not only tasty they are even very filling too and hence can be eaten as a meal by itself.One can play with the ingredients that go in the salad and prepare it according to their wish.This is a very versatile salad and can be prepared with various beans.
Recipe serves 2 people
1 can Chickpeas/Garbanzo Beans ( Can use fresh beans – 1/2 cup soak it overnight and pressure cook until done)
1 medium Potato boiled
1 small Onion,finely chopped
1 small Tomato,seeded and finely chopped
Salt to taste
1. In a small bowl mix all of the ingredients for the dressing and keep aside.
2. In another bowl mix Chickpeas, Onions, Potato, Tomatoes, Green Chilli and Chopped Coriander.
3. Now the dressing and give it nice stir. Serve immediately.
