Happy Monday everyone. Finally the storm and rains in Colorado have slowed down and its good to have Sun back after 4 days of non stop rain and hail. Its time for another MIMM post hosted by Katie.
As said in my previous post, weekend was spent most of the time in home. Saturday is all about cleaning the home, doing laundry, ironing clothes and also worked for couple of hours. Sunday started with a good note as I made this amazing and delicious frittata. Hubby and my daughter loved it too. Recipe soon on the blog.
After lunch we went to meet little guy of our friend’s who is now a month old. Later some grocery shopping and started prepping for the week ahead.
I made meal planning for this week yesterday night. A few minutes of time spent for deciding the week menu helps me a lot through the week. Else most of the time I will be thinking what to prepare for lunch / dinner while driving back to home from work or before waking up in the morning.
Monday: Spinach Dal, Broken Wheat for Lunch, Methi Paratha, Mixed Veg pickle for Dinner.
Tuesday: Greek Yogurt, Granola, Berries for Lunch, Dosa, chutney for Dinner.
Wednesday: Eggplant curry, Broken Wheat for Lunch, Brown rice with roasted veggies for Dinner
Thursday: Ridge gourd curry , Broken Wheat for Lunch, 13 Bean Soup for Dinner
Friday: 13 Bean Soup (Leftovers) for Lunch, Roti, Tofu with veggies for Dinner
Saturday: Dal, Amaranth Stew, Broken Wheat, Chickpeas curry, Roti for Dinner
Sunday: Leftovers / Dal for Lunch, Salad for Dinner
