Okra ( Bhindi in Hindi) is one of my favorite vegetables. Okra when paired with onions and tomatoes with some spices is one of my favorite dishes. Its easy and my go to dish for weekly dinners. Here goes the recipe
Okra (Bhindi) – about half pound
Onions – 1 large (thinly sliced)
Tomato – 1 large(thinly sliced)
Garlic cloves – 3
Corriander Powder – 1tbsp
Cumin seeds – 1tsp
Garam Masala – 1tsp
Turmeric Powder – 1tsp
Kashmiri Chilli Powder – 1tsp
Salt to taste
Oil – 2tbsp
Water – 1/4 cup
Corriander – few strings for garnish
Wash the okra and pat dry with a paper towel. Chop them into 1 inch pieces.
Heat a pan with 1tbsp oil. Once the oil is heated add the okra and fry them until 3/4th done.
Remove them into a plate. In the same pan add another 1tbsp of oil and add cumin seeds.
Once the cumin seeds starts spluttering add chopped garlic. Fry it for about 30 seconds and then add the sliced onions.
Fry the onions till they are translucent. Now add turmeric powder, corriander powder, garam masala, kashmiri chilli powder and fry them for about a minute.
Add the chopped tomatoes and cook them till they are mushy.
Add the fried okra and water. Adjust salt. Cook them until the okra is cooked and the water evaporates.
Garnish with the chopped cilantro. Serve it hot with roti or rice.
